Happened on this today from Ideas in Food and I'm for sure making these later. Simple idea, but something about the concept works for me. Kinda reminds me of these apple fritters they sell at Bob's donuts in SF. Those fritters are amazing fresh outta of the fryer when you're drunk at 3am. Scones are more reasonable to do at home though. I adjusted the recipe a bit, so you can blame me if you have trouble, not Aki and Alex.
Ingredients
- 1 cup whole wheat flour
- 1 cup AP flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 4 ounces cold unsalted butter, diced
- 1/2 cup apple cider
- 1/2 cup heavy cream
- 1 finely diced apple
Directions
- Oven to 425°F.
- Whole wheat flour, white flour, oats, brown sugar, baking powder, salt and spices in food processor for 15-20 seconds to form a powder.
- Cut in the the butter.
- Combine cider and cream. Mix with the dry ingredients.
- Spread the dough out on the counter. Sprinkle the apples on top. Mix it up and divide it in two parts.
- Form each half into a round. You gotta be the judge how thick you like your scones. Keep in mind that they'll rise a bit.
- Cut the rounds into wedges and bake on parchment for 10 minutes. Rotate and bake 10 more. You might need another 5 minute baking round.
They also suggested brushing them with caramel before baking. Probably good, but that's a lot of work, and I'm not that into it. I'll probably just dust with some sugar or something.
