French Apple Cake

When I first discovered this I thought it was kinda weird. Step 5 seemed too specific. This is really my go-to cake now. Texture is great. Flavor is awesome. You can replace the apples with other fruit you want. I usually use pears actually.

Ingredients

  • 3/4 cup (flour
  • 3/4 teaspoon baking powder
  • pinch of salt
  • 4 large apples, a mix of varieties
  • 2 large eggs
  • 3/4 cup sugar
  • 3 tablespoons dark rum
  • 1/2 teaspoon vanilla extract
  • 8 tablespoons butter, melted and cooled to room temperature

Directions

  1. Preheat oven to 350ºF.
  2. Butter an 8" or 9" round baking pan.
  3. Whisk together flour, baking powder, and salt.
  4. Peel, core and slice the apples into narrow wedges (about 1/4" wide).
  5. Beat the eggs until foamy, then whisk in the sugar, rum and vanilla. Whisk in half of the flour mixture, then gently stir in half of the melted butter
  6. Stir in the remaining flour mixture, then the rest of the butter.
  7. Fold in the apples until they’re coated with the batter. Scrape them into the prepared cake pan and smooth the top a little with a spatula. I like to arrange a few apples on the surface to make it look cool.
  8. Bake the cake for 50-60 minutes or until a knife inserted into the center comes out clean. Cool for 5 minutes. Serve it up
