Toasted Vegetable and Brie Sandwich

Ingredients

  • 2 zuchinni, sliced lengthwise
  • 1 lg sweet potato, sliced lengthwise
  • salt & pepper to taste
  • 2 Tbsp olive oil
  • 1/2 sweet onion, thinly sliced
  • 4 slices sour dough bread
  • 4 Tbsp mayonnaise
  • 4 Tbsp dijon mustard
  • 1/2 round brie cheese, sliced
  • 2 handfuls of arugula
  • 2 Tbsp butter

Directions

  1. Preheat oven to 400 degrees
  2. Toss the zucchini and the sweet potatoes in 1 Tbsp olive oil and season with salt and pepper
  3. Arrange the zucchini and sweet potatoes on a baking sheet and bake for 20 minutes
  4. Sautee the onion in the remaining olive oil until tender, about 7 minutes
  5. Spread the outside of each piece of bread with mayonnaise
  6. Spread the inside of each piece of bread with dijon mustard
  7. Layer the sandwich with brie cheese, arugula, zucchini, onions, and sweet potatoes
  8. Over medium heat, melt the butter in a cast iron skillet
  9. Toast the sandwiches on both sides until golden brown
