Shrimp Fettuccine Alfredo

Here is my version of a classic.

Ingredients:

1/2 lb shrimp, peeled and deviened

1 C. grated Parmesan cheese

1 C. heavy cream

8 cloves garlic, peeled and halved

3 green onions, thinly sliced (plus more for garnish, optional)

1 tsp. crushed red pepper flakes

2 tsp. garlic powder

3 Tbsp. olive oil, divided

2 Tbsp. butter

1 pkg. fettuccine pasta, cooked to package directions

1 C. milk

1/2 C. reserved pasta water

salt and pepper to taste

In a saucepan over medium high heat melt butter and 2 Tbsp. olive oil.

Add garlic and cook until soft but not brown, about 10 minutes.

Mash garlic with a fork or wooden spoon, or whatever you may be using. Add onions, red pepper flakes and shrimp. Cook until shrimp is JUST pink and then remove with a slotted spoon.

To the pan add pasta water and reduce by half.

Add cream and bring to a boil. Once boiling, immediately remove from heat, stirring as not to burn it.

Add cheese and stir to combine.

Place back over medium heat and add milk, salt, pepper, and garlic powder until your desired thickness has been achieved (took me a whole cup).

Add shrimp back to pan, cook another 2 minutes so shrimp can finish cooking.

Serve pasta with sauce poured over and garnished with green onions.
