1 1/8 c Water
3 tsp Sodium citrate
16 Oz Cheddar cheese, grated
3 slices American cheese
12-16 Oz Macaroni
2 tsp Salt
Fill a large pot with water and add salt. Bring to a boil and add macaroni. Boil, stirring occasionally, until macaroni is done. Drain and return to pot.
Meanwhile, add water and sodium citrate to a medium saucepan and bring to a boil. Reduce head to medium-low. Begin to add cheese, one handful at a time, stirring well until cheese melts. Once all the cheddar has melted, add the American cheese and stir until melted.
Mix sauce into macaroni and serve.
