Super Yummy and Easy Carrot Cake, No Layers Needed

Hey everyone! I've taken a recipe from one of my favorite books, Love Real Food, and recently made a video on how to make it since I love cooking videos so much.

The Cake

1 3/4 cups whole wheat pastry flour

2 tsps ground cinnamon

1 1/2 tsps baking powder

1/2 tsp baking soda

1/2 tsp fine sea salt

1lb carrots, shredded and grated (3 cups)

1/2 cup walnuts or pecans, cut into pieces

1/3 cup coconut oil, melted

1/2 maple syrup

2 eggs

1 cup greek yogurt

1 tsp vanilla extract

You wanna mix the dry ingredients first, and then mix melted coconut oil with the maple syrup in another bowl. Whisk the eggs with the vanilla and greek yogurt, and then add the dry ingredients with the wet. Then mix in the shredded carrots and pecans or walnuts!

The Frosting

8 ounces cream cheese (room temp)

2 tsps unsalted butter (room temp)

1 1/4 cups powdered sugar

1 tsp vanilla extract

This you whisk all together.
