Soy Sauce Braised Potatoes, Gamja jorim

Gamja jorim is a braised potato dish. It’s very popular as a side dish at home and restaurants and for home-packed lunch boxes. Jorim refers to dishes made by simmering the main ingredient in sauce until the sauce is reduced.

The potatoes are braised in a slightly sweet, soy-based sauce until the sauce is reduced and the potatoes are tender. It’s a filling, inexpensive dish we all grew up on.

You can also add some gochujang (Korean red chili pepper paste) and/or gochugaru if you like to add a little heat to the dish.

How To Make Soy Sauce Braised Potatoes (1 servings)

Ingredients

  • 180g potatoes
  • 2 pieces of garlic
  • 1 chili pepper
  • a bit of green onion
  • 1 tbsp sugar
  • 2 tbsp soy sauce

Instructions

  • First, boil water to cook potatoes.
  • Prepare 2 potatoes (180g).
  • Cut the potatoes into bite-size pieces.
  • Cook the potatoes with 1/2 tbsp of salt for 3 minutes on the pan with it's lid closed.
  • Mince 2 pieces of garlic.
  • Slice a bit of green onion for garnish.
  • A chili pepper for that little kick of spice.
  • Move cooked potatoes into a strainer after 3 minutes.
  • Cover the pan with oil and put 1 tbsp sugar and 2 tbsp soy sauce, then let it boil down.
  • Now, add the potatoes and minced garlic on the pan
  • By cooking the potatoes for 3 minutes in water and for another 3 minutes on the pan, the potatoes will not become soggy, and maintain its crispiness.
  • Put potatoes in the plate.
  • Decorate the dish with the green onion and chili pepper, and sprinkle with sesame seeds.
