Mediterranean bruschetta

INGREDIENTS

1 bread stick, sliced

1 cup roasted red peppers, sliced into small squares

½ cup sun-dried tomato strips packed in oil, sliced into small squares

⅓ cup kalamata olives, sliced

1 tbsp capers

2 tbsp balsamic vinegar

½ tsp salt

1 tsp red chilli flakes

INSTRUCTIONS

Toast the sliced bread in a toaster or under a grill.

Sliced the roasted red peppers and sun-dried tomatoes.

In a large mixing bowl combine all the ingredients and mix well.

Top the bread slices with the mixture.

NOTES

Make sure to use high quality balsamic vinegar for this recipe.
