Prosciutto Wrapped Lamb Meatloaf with roasted Pepper Sauce and Roasted Balsamic Vegetables

Ingredients

Meatloaf

  • 4 slices of thick cut prosciutto
  • 1 1/2 lbs. ground lamb (can also use other ground meat)
  • 1 egg
  • 1 cup heavy whipping cream
  • 1 tsp cumin
  • salt and pepper
  • 1/2 tsp cinnamon
  • 1 onion, finely chopped
  • 1/2 cup dried breadcrumbs
  • 3 garlic cloves, minced

Pepper Sauce

  • 2 red bell pepper
  • 3 tomatoes, chopped
  • 2 cloves garlic, chopped
  • the other half of the 1 cup of heavy whipping cream
  • 1 sprig of fresh oregano
  • 4 tsp olive oil

Roasted Balsamic Vegetables

  • 6 kaleidoscope carrots, cut in half length ways
  • 3 radishes, sliced
  • 1/2 lb. asparagus
  • 1/2 lb. green beans
  • 1 yellow onion, sliced
  • 2 sprigs of fresh rosemary
  • 2 tsp salt
  • 2 tsp pepper
  • 1/4 cup balsamic vinegar

Cooking

Pepper Sauce

  1. cut in half the two bell peppers and place in a lightly oiled cast-iron pan or an oven safe pan. place in the oven. turn oven on to broiler setting, and roast bell peppers, while flipping from time to time.
  2. once bell peppers have a slight char around their edges and are soft and wilted, removed from oven and wait to cool down. once cooled down, combine the rest of the sauce ingredients and the now roasted peppers in a food processor and combine until sauce consistency. set aside.

Roasted Balsamic Vegetables

  1. cut carrots and slice radish and onion. mix with asparagus and rosemary green beans and rest of ingredients in a bowl. mix well and combine.
  2. pour over a baking tray, pour over any excess ingredients from the bowl. spread out on baking dish. place in oven at 350F for 10 - 15 minutes. (I usually place the vegetables on the lower rack of the oven so they can cook while the meat loaf is. just wait until the meatloaf has 10 - 15 minutes left of its cooking time to add the vegetables).

Meatloaf

  1. combine all the meatloaf ingredients in a bowl and mix with hands into a paste-like consistency (minus the prosciutto). wrap with plastic and place in fridge for at least 1 hour.
  2. remove from fridge and form meat into a loaf shape. wrap with prosciutto and place in an oiled baking dish. pour over half the pepper sauce. bake in the oven for 25 - 30 minutes at 350F.
  3. (optional) cook the remaining pepper sauce in a pan on the stove until it begins to boil. remove from heat and pour over meatloaf to serve.
