Turkey Tail Soup

There are (maybe not so) surprisingly few recipes on the internet for turkey tail. On a whim, I picked up four smoked turkey tails with little idea on what to do with them. Here is the recipe that I made that was very well received at home and with the people I shared with at work. I am not a chef but I play one at home.

4 smoked turkey tails
7 cups water
1 pkg. regular size carrots
1 pkg. celery
2 poblano peppers
2 small onions
12 golden potatoes
1 tomato
4 spicy cajun sausages
1 16.oz pkg. bulgar
2 tbsp. oregano
2 tbsp. paprika
2 tbsp. salt & pepper

Put the turkey tails on low in a large crab pot or other large pot that can hold hold all of the water and ingredients. Simmer for 3 hours. Chop up all of the other vegetables and dice the sausage. After the the tails have simmered, add all the other ingredients and keep on low for 8-12 hours. Before serving, remove all the meat from the tails and put the meat back in the pot, discarding the skin and bones.
