Trying to do a gourmet mac and cheese for Thanksgiving, but I only have a few ideas and no idea how to execute. Please help!

So, I have this idea in my head of some of the things I want to use, but I am not sure how to execute it or if some of the ideas are just bad.

I have this idea of a Sauvignon Blanc based cheese sauce with gruyere and asiago, cover the mac in bread crumbs and parmesan and broil at the end, and I want to include pearl onions in it. That's basically the extent of my ideas, but I have no idea how to execute it within a dish and no idea if these are too conflicting of flavors or not.

Can anyone help me devise a plan of attack on how to execute this?
