Foolproof recipe for amazingly soft challah bread.

Recipe makes 2 loaves:
- 500 grams AP flour
- 200 grams water
- 7 grams instant yeast
- 100 grams sugar
- 40 grams vegetable oil
- 1 egg
- 7 grams salt
Proof yeast in 1/4 of the amount of water until it bubbles. In stand mixer add all ingredients and mix on slow to bring together, then increase speed to medium and kneed for 5 minutes until dough pulls away from sides of mixer.
Let proof (rise) in a covered bowl for 90 minutes or until doubled. After dough has doubled, split into 2, and each half split into 3 equal size dough balls.
For each loaf of Challah you'll roll each of the 3 small dough balls into long strands about 12 inches long. Braid the 3 strands (watch above video for details) and let rise for 2 hours until doubled in size.
Brush on egg wash and top with sesame seeds.
Bake at 350 degrees F for 25 minutes.
