Simply put, I don't like vegetables that much. I don't go out of my way to exclude them, but when I do each veggies, they either come loaded with salt, butter, or some sort of spiciness to make them taste better.
I'm trying to increase my fiber intake, and improving my diet overall, although I'm not vegetarian, I figure having at least one veggie centered dish a day will help with my veggie intake, so any good tasting vegetarian dishes would be appreciated. (However, I do favor recipes that involve roasting, or grilling, and anything that adds spiciness, as that's the method I like my vegetables the most)
