Non dairy Mac and cheese recipe?

Hello...

My son recently discovered he is very lactose intolerant....basically out of the blue.

Does anyone have a really good dairy-free Mac and cheese recipe to share? I'm a very competent cook and I have access to good grocery stores for more esoteric stuff.
