Baked Honey Mustard Chicken Thighs

Ingredients:

1 lb bone-in chicken thighs (skin on)

1 tbsp yellow mustard

1 tbsp whole grain Dijon mustard

1 tbsp honey

1/2 tbsp soy sauce

1 tsp garlic paste

1 tsp ginger paste

1 tsp red chili flakes (optional)

Salt, pepper, garlic powder, onion powder to taste.

Directions:

Preheat oven to 425. Pat down chicken thighs with dry paper towel. Generously coat both sides with salt, pepper, garlic powder and onion powder. In mixing bowl, combine both mustards, soy sauce, honey, garlic & ginger paste, and red pepper flakes (if you like spicy). Coat chicken on both sides with sauce, using a meat brush or rubber spatula. Line sheet pan with parchment paper, then place baking rack on top. Place pan on the top oven rack. Cook until temp of 165, about 50 minutes.

Notes:

This recipe works with boneless thighs, drumsticks, and breast as well but cooking time will vary on each cut. I like crispy skin, so I broiled the chicken for about 3 minutes before taking them out of the oven. If you don’t have a wire cooking rack, placing the chicken directly on the sheet pan will work just fine.
