It had been a while since I made Indian food at home. So, I made these lip-smacking chicken lollipops that took me back to the streets of Calcutta!
Optional read: As a side note, I am a Chef and I love cooking! Recently, I took to YT because being at home and not having much to do is not something most chefs are good at! So glad I started this side-project with my husband - we collaborate on a whole other level since we started the channel. :) Each weekend, we have something to look forward to! Recipe:
Ingredients:
Chicken Wings: 1 Lb
Marinade:
Red Chili, dry: 3 pcs
Green Chilies: 3 pcs
Onion, white: 4 inch pc or 2 oz, just enough to blend the chilies together
Soy Sauce: 3 Tbsp
Ginger garlic paste: 1 Tbsp
Vinegar: 1 Tbsp
Egg whites: 1 Tbsp
Coriander Powder: 2 tsp
Sauce:
Onion, white: 1 cup chopped
Ginger garlic paste: 1 Tbsp
Spring Onion: 1/4 cup chopped
Ketchup: 1/2 Tbsp
Soy Sauce: 1 Tbsp
Fish Sauce: 1 Tbsp
Salt, sugar: 1 tsp each
Oil, to cool: 2 tbsp
For frying drumsticks:
AP Flour and Rice Flour: 2 Tbsp each
Oil, to fry
Steps:

Clean the wings and form lollipops by dividing the wing into 2 and collecting the flesh in a ball to form a drumstick. Refer video timestamp 0:39 for cleaning procedure for a better description with visuals.

Marinade: soak red chilies in hot water for 10 mins. After 10 mins, discard water and blend with white onion and green chilies. This is the chili paste for the recipe.

Take 1 tbsp of the chili paste and mix with the other ingredients for the marinade. Then, pour over the drumsticks. Mix. Rest for 45 mins in the fridge.

After 45 mins, sprinkle with the flours and deep fry until golden and cooked through. Should take about 3-4 mins on both sides. Drain and set aside.

For the sauce: heat veg oil in a pan. Add finely chopped onions and garlic and cook until fragrant.

Add salt to taste and 1 tsp of sugar. Mix well.

When onions are brown, add the soy sauce, fish sauce, and ketchup. Mix well then add the leftover chili paste from before and one half of spring onions; the other half will be for garnish. Stir together. Let simmer for 2-3 mins.

Add cooked drumsticks, mix and coat with the sauce.

Plate and garnish with leftover spring onions.
