Easy Asian Beef Stir Fry with Onion

If you want to have a stir fried beef that has tons of flavour and umami, try this!

No more dry, tough or bland beef!

INGREDIENTS:

  • 350 gr sliced beef for stir frying
  • 1 yellow onion
  • 1 sprig of spring onion
  • 1 clove of garlic
  • 1 knob of ginger
  • ¾ tbs fish sauce
  • ¾ tbs oyster sauce
  • 1 tbs Maggi soya sauce
  • ½ tbs sugar
  • 1 tbs corn starch
  • 4tbs oil
  • Ground white pepper to taste

IMPORTANT NOTES:

  • I could only find already sliced beef, but you can buy other tender cuts of beef and slice yourself too!
  • Always taste and adjust, because all brands of fish sauce, oyster sauce and soya sauce have different levels of saltiness and sweetness. When in doubt, add a little lesser!
  • Always wait until the pan is very hot then fry the beef quickly. Low heat/staying too long in the pan will only give us watery sauce and tough/dry beef.
  • Depending on how thin the beef slices are, allow to marinate for at least 15 mins. If you do beef cubes, marinate for at least 60 mins.

STEPS:

  • Lay sliced beef on the chopping board
  • If they have irregular thickness, use the back of the knife to flatten and quickly tenderize them
  • Place beef in a bowl, add fish sauce, oyster sauce, soya sauce, sugar, ground white pepper and corn starch. Mix well
  • Add 2 tbs of oil and mix again to coat each piece evenly. Marinate for 15 mins
  • Cut spring onion into 4 cm pieces
  • Cut yellow onion into medium wedges
  • Mince garlic
  • Slice ginger into thick slices, then use the knife to smash them
  • In a wok under medium high heat, add 2 tbs of oil
  • When the pan is very hot, add beef and stir fry quickly
  • When the beef is 50% cooked, add garlic and yellow onion wedges
  • When onion turns translucent, add spring onion, mix well and remove from the heat
  • Serve on top of steamed white rice.
  • Optional: pair with sliced tomato and cucumber for some contrasts in flavours and texture. Enjoyyy!
