Ingredients
- 1 Weber Kettle + Charcoal
- 4-6 Soaked wood sticks (different types of wood add different flavors)
- 1 Salmon side, typical 1-1,5 pounds
- 1 sheet of Tinfoil
- Regular Sucker
- Kosher Salt
- Spices you prefer (chili flakes, bbq or other to add flavor)
Directions
- Start preparing a bed of tin foil and place the salmon skin-side down
- Sprinkle with a thick layer ad salt and sugar, and put it in the fridges for a couple of hours to remove moisture from the fish.
- Rinse the salmon under cold water and tap it dry
- Add a thin layer of sugar, salt, and spices to the fish and it ready to be smoked.
- Weber Kettle fired up with a ½ tower charcoal distributed to one side, the soaked wood is being added on top, and smoke with start evolving after 5 min.
- Put the Salmon on the tin foil bed on the opposite side of the charcoal
- Close the kettle by likewise placing the venting on the opposite side of the charcoal to create an even flow of smoke across the fish,
- 20 min after the fish will be ready, check by pressing on the thick side and the fish should react spongy when pressed (use a thermometer if you are unsure of that appetite)
- Done, It's that easy and a super delicious dish :-)
