My mother is Mexican and my father is Guatemalan and recently I’ve been wanting to get a deeper connection with my heritage through food. One thing I want to learn how to make is Mole, specifically from Colima which is a sweet chocolate Mole but all the recipes I see tend to be generic Mole recipes even though Mole is an incredibly versatile sauce. Anyone have a good Colima or just overall traditional Mexican mole.
