Pastel Goreng (Indonesian Empanadas)

Fillings (cook before adding):

Vermicelli rice noodles

Ground beef

Boiled potato cubes / egg slices

Steamed celery / carrots / cauliflower

Note: Fillings can include many meat and vegetable combinations. This recipe is for using up leftovers.

Dough (enough to make 40):

First, mix (in this order)

4 cups of flour

1 tsp salt

2 eggs

1 stick of butter

1/3 cup cold water

Then, let the dough rest in a covered bowl for half an hour

Instructions:

1.Roll the dough out flat onto a floured surface

2.Use a bowl to cut out circles of dough

3.Add filling to half of each circle

4.Fold dough around the filling & pinch little pleats to seal

5.Deep fry until golden-brown
