Salmon Briyani

Step by step instruction

Ingredients:-

2 cups basmati rice

1, 1/2 tsp salt

500gms salmon fish

1 large onion - chopped

1 large tomato - chopped

1" ginger

1 bulb garlic

2 stalks coriander leave (blend ginger, garlic and coriander leaves with little water)

3 tbsp yogurt

2 tbsp lemon juice

1 tbsp ghee

1 cup of water

1 cinnamon

3 cloves

3 cardamoms

2 bay leaves

1 tsp chili powder

1 tsp coriander powder

1/2 tsp turmeric powder

Coriander leaves for garnishing

Optional:

1 screwpine leave / daun pandan

1 tsp garam masala powder

Method

  1. Soak basmati rice for 30 mins

  2. Boil water in a pot with 1 tsp salt and cook rice till 90%. Drain the rice and keep 1 cup of the water for later use.

  3. Heat little oil and fry the fish.

  4. In the same oil, add the spices, followed by onion and cook till golden brown.

  5. Add ginger garlic coriander paste, chopped tomatoes, and cook till the tomato softens.

  6. Add chili powder, coriander powder, turmeric powder, salt, lemon juice, yogurt followed by salmon and cook for 2 mins.

  7. Layer the rice, fish, ghee, coriander leaves in a pot with 1 cup of water and cook for 15 mins in low flame.
