My friend just announced she’s bought a house, and I’d like to bring her some food so she doesn’t have to worry about cooking on her first night in the new place. Usually when I have her over I make a vegetable based soup or something similar like black bean chili, but we’re in the middle of summer in a desert and I’d like to make her a meal that’s a little fancier than a salad to celebrate her new home.
Any recipe suggestions that can be eaten chilled or at room temp would be amazing, but even if it’s a dish served warm I wouldn’t be opposed.
