Easy Sichuan Shrimp and Long Beans

Ingredients

1 Bunch of Long Beans, cut in ~1 in lengths

Shelled shrimp

4 cloves garlic, chopped

1 Tbs fresh ginger, chopped

4 Green onions, chopped

1.5 Tbs Sichuan chili bean paste

1 Tbs Fermented black bean paste

2 oz light soy sauce

2 oz Shaoxing wine

1.5 tsp sugar

Sesame oil

Process

Heat wok, add sesame oil and when it starts to smoke add beans and stir fry 2-3 minutes. Add garlic, ginger, white parts of green onions and continue until they are fragrant about 1 minute. Add chili paste, stir until beans are well coated. Add black bean paste, stir. Clear some space in bottom of wok, add Shaoxing wine and scrape any browned seasonings from bottom. Add soy sauce and sugar and stir. Add rest of green onions and shrimp and continue stirring until shrimp are just cooked through and serve immediate over rice.
