Mexican burrito bowl

INGREDIENTS

¾ cup brown rice

salsa roja*

1 zucchini, cut into small bite sized pieces

1 red bell pepper, cut into small bite sized pieces

½ brocolli, cut into very small florets

200g / 8oz mushrooms, finely sliced

2 red onions, 1 onion finely diced, 1 onion cut in half and finely sliced

1 400g / 14oz can black beans, drained and rinsed

½ cup fresh cilantro

1 tomato, seeded and diced

INSTRUCTIONS

Cook the brown rice according to the package instructions.

While the rice is cooking prepare the veggies in a large pan on medium heat, adjust the heat if necessary. Add the onion and mushrooms to the pan and saute for 5 minutes

Add the brocolli to the pan and saute for another 5 minutes.

Add the bell pepper to the pan and saute for another 5 minutes.

Add the zucchini to the pan, lower heat and saute for another 5 minutes. Place a lid on the pan and set aside.

Reheat the black beans in a frying pan for a few minutes.

Layer the burrito bowl in the following order. 1-Brown Rice. 2-Black Beans. 3-Salsa Roja. 4-Veggies. 5- Fresh red onion. 6-Cilantro. 7-Fresh tomato. See the photo below for instructions on layering this dish.
