My dietician says I need more vegetables. Any favourites?

To clarify, vegetables here means things that are not legumes or grains, I get plenty of those.

I'm thinking slightly exotic root vegetable roasts? Or delicious soups? Stir frys? Any cuisine, the less western the better (I have a lot of indian and middle-eastern spices in my pantry, but I'm willing to buy new ones if they're compelling)

As for what's in season, I'm in Eastern Canada, so not much for now, but probably a little more in the coming months. There aren't any frozen vegetables left, I used up the tomatoes.
