Make ahead vegetable side dishes for thanksgiving?

So, I normally make my famous sweet potato casserole for thanksgiving but someone else in the family threw a tantrum because SHE wants to make it this year and of course, we always give in to tantrum throwers.

My mother requested I bring "vegetables." Which could mean literally anything. If I was petty, I would just show up with a can of corn.

What can I make a day or two ahead of time that will travel two hours and reheat well? I want to bring two things.

No mashed potatoes as those are being made by my mother.
