Need help planning healthy, simple and cheap dinner ideas!

My family and I try to stick to the local fruit + veg markets for our weekly shopping. Meal planning is something we've tried but it never been that successful as one of us will always decide they won't feel like curry anymore that night. I struggle to work out what meals to cook days in advance. Our shopping list normally starts off looking like this.. chicken, mince meat, sliced ham, tins of tuna, carrots, potatoes, bunch kale, butternut pumpkin, green oak lettuce, 2 cucumbers, multi grain bread, sliced cheese, rice milk, rolled oats, bunch bananas, cans of chopped tomatoes and apples or pears.

Can anyone suggest some dinner ideas please! I am sitting down to write a shopping list now and want to write up a meal plan for the week as well. I intend to take them with me shopping and want to see if it helps with money over the next few weeks.

We try our best to avoid buying anything processed and packaged so we like to avoid the supermarkets. I'd rather cook meals using fresh produce.
