Our family loves dishes with peanut satay sauce. When we go to Asian restaurants we are always looking for any satay menu options. However, we find it it so ‘hit and miss’ as to what type of satay you will get. Some restaurants ramp up the spiciness at the expense of the peanut flavour. Some have a very thin satay sauce. I admit we are very ‘picky and critical’ when it comes to our satay sauces. Our preference is a satay that is lower on the spicy scale but far richer on the peanut (butter) taste scale. This satay sauce provides a light spicy tang, but a wonderful thick sauce with a strong peanut flavour. The onion and crunchy peanut butter, mixed through, adds to the rich texture of this sauce.
Ingredients:
• 2 tbsp Vegetable Oil
• 1 clove Garlic, crushed
• 1 Brown Onion, diced
• 1/4 tsp Chilli Powder, use up to 1/2 tsp (to preference)
• 1/2 cup Peanut Butter, use crunchy
• 1 tbsp Soy Sauce
• 1 tbsp Lemon Juice
• 1 tbsp Brown Sugar
• 3/4 cup Coconut Cream
• Roti to serve
Instructions:
1. Heat oil in saucepan over high heat.
2. Add garlic, onion and chilli powder. Cook until onion is clear (approx 5 minutes).
3. Stir in peanut butter, soy sauce, lemon juice and sugar.
4. Add coconut cream and cook until mixture boils, stirring constantly.
5. Season with salt to taste and add more sugar if necessary. (makes about 1 1/2 cups)
6. Serve with Roti
