Hello all, and thank you for reading. My sister recently had a baby and she and her doctors are having a hell of a time pinning down and dealing with his dietary restrictions. He’s not yet old enough to go through typical allergy testing, but his poor baby bowels are reacting horribly to almost everything my sister has eaten and all of the special formulas they’ve tried. So he’s back to breastfeeding and my sister is gradually figuring out what she can eat for them via a closely monitored elimination diet.
As of right now, the only foods she’s able to eat are the following:

Coconut (flour, milk, oil, etc)
-
Canned peaches (I’m not sure if she can also eat fresh ones or if they’re just not available in her location right now)
-
Blueberries
-
Pears
-
Bananas
-
Black beans
I believe the only spices she’s able to eat are salt and black pepper, as others often have some sort of additive that is an irritant… so pretty much anything not on that list is currently not an option.
She used to be living off of rice and meat-based meals but those were determined to be an irritant too, so this is where she’s currently at. Coconut was a recent addition because she desperately needed fat in her diet, and once they’ve established that baby isn’t reacting badly to that she’ll be able to try phasing in other foods again. Hopefully she’ll be able to incorporate nuts or lentils or something, but your guess is as good as mine. I know this all sounds ridiculous, but it's serious and any additions to the list are really slow-going for the health of the baby.
Do you have any recipes or suggestions that can make this tiny list feel less restrictive? Maybe creative bean paste and fruit desserts, or super simple coconut-flour based foods? Any other creative ways to use coconut (her only fat source) and black beans (her only protein source)? Please, any help you can offer is appreciated. Neither she nor I are proficient cooks even with normal ingredient lists.
