[Request] Recipes for someone with a bad back?

I'm dealing with a back injury at the moment. I have a couple months to go until the surgery and I have to take it easy. My husband works long hours so I'm trying to still manage things like cooking and light cleaning where I can. Cooking has been more difficult than I'd thought and I'm sad to say we've resorted to delivery more often than we really should have. So I'm hoping to get some suggestions.

I can really only manage a couple minutes of prep or cooking at a time. Every time I get up adds a bit more pain through the day but I can do that much easier than one larger slot of time. Because of that, I've relied a lot on my crock pot and slow cooked meals. I try to make extra whenever possible because heating up left-overs is easier than cooking again. But even with slow cooker recipes, I find myself struggling. I'm making this recipe today but found I had to stop after slicing the beef, again after seasoning and browning it and then once again after slicing up the veggies.

So I'm looking for low-prep, not much clean-up type recipes that don't keep me tied to the kitchen. We don't have any major dietary restrictions. I do have a crock pot, most normal kitchen supplies and hardware and enough experience to handle most things.
