**Grampa Amos's Mincemeat** An ancient recipe

Ingredients

  • 4 1/2 cups of cooked ground meat ( we used wild deer and rabbit meat )
  • 1 pint cold meat juice
  • 1 1/2 cups suet, or margarine or butter
  • 10 cups of chopped apples, small pieces
  • 1 lb chopped seeded raisins
  • 1/2 lb mixed peel
  • 2 oranges, juice and rind, ground
  • 1 lemon, juice and rind, ground
  • 1 cup seedless raisins
  • 2 heaping tsp cinnamon
  • 1 tsp nutmeg and cloves
  • 1/2 cup vinegar
  • 2 cups brown sugar

Make It

  1. Mix together in a heavy bottom pot and cook very slowly. It has a tendency to

    scorch, so keep the heat low to medium.

  2. Stir frequently. It takes about three hours on low to med before it is complete.

  3. When the liquid goes dry it is a sign that it is finished cooking.
