Blueberry Pancakes that are ACTUALLY healthy

INGREDIENTS (PANCAKES) 45g old fashioned oats (0.5 cup)

3 egg whites

115g cottage cheese (0.5 cup)

0.5 tsp lemon zest

2 tsp lemon juice

1 tsp honey

1 handful of blueberries

INGREDIENTS (SAUCE)

2 tbsp greek yoghurt

2 tsp lemon juice

2 tsp lemon zest

2 tsp honey

INSTRUCTIONS

First, let's prepare the sauce. It is uber simple. Stir to combine the honey, lemon zest, lemon juice and greek yoghurt until it's a smooth mixture. That's it! 🙂 Let it rest in the fridge while you prepare the pancakes.

TIP: When grating the lemon zest, make sure you only grate the thin, yellow outer-layer of the lemon. The white pith that's underneath might give your dish a too bitter taste.

Prepare the pancakes batter: grab your blender and put in the oats, honey, lemon juice, lemon zest, egg whites, and cottage cheese. Blend the ingredients.

If you feel that the batter is too liquid, add a bit more oats. If it is too thick, add a bit of water. Play around until you have a perfect pancake substance.

Move the batter from your blender into a mixing bowl. Throw in 2/3 of the blueberries.

Heat a large pan with ghee (or coconut oil, if you are out of ghee) on a medium-high heat.

Use a table spoon to pour the batter in the pan, forming mini pancakes. Bake the pancakes until they are golden brown (approx. 2 min) and then carefully turn them around. After turning them around, press the pancakes softly into the pan with a spatula to make sure they bake evenly. The blueberries are a bit thicker than the pancake, so it is good to press them in a little bit.

After both sides are nicely golden brown and ready, remove the pancakes from the pan.

TIP: If you are making more than one pan of pancakes, you can keep the ready ones warm in the oven on low heat.

To serve, top the pancakes with the lemon sauce and the rest of the blueberries. If you have mint around, you can also drop some leaves on top to make the dish look even more beautiful. Also, grating some extra lemon zest on top can give it a fun and festive look. 😀
