Carrot cookies with oatmeal is an easy and healthy homemade cookie recipe for kids.

I used 1 tbsp of ground flax seed in this recipe; you can replace it with one egg. Flax seed is an excellent replacement for the eggs in baking. Replace one egg by soaking one tbsp of ground flax seeds in three tbsp of cold water for 5 minutes or until it becomes sticky egg like consistency. The dough will be thick and sticky so mix properly until all the ingredients mix properly.

You can replace the sugar with honey or maple syrup, but make sure to reduce the melted butter. Oatmeal cookies are chewy and healthy, also tastes delicious. Course: Bakes Cuisine: Indian Servings: 5 Author: Antonet Roajer Ingredients 1 cup CARROTS RAW 1 cup OATS 1 cup WHEAT FLOUR 0.75 cup SUGARS GRANULATED 5 tbsp UNSALTED BUTTER 1 tsp CINNAMON 0.50 tsp VANILLA EXTRACT 1 tsp BAKING POWDER 1 tbsp FLAXSEED 3 tbsp WATER Instructions In a bowl add wheat flour, baking soda, cinnamon powder and mix well. In a separate bowl soak 1 tbsp of flax seed in 3 tbsp of water for 5 minutes and mix well. Add sugar, melted butter, vanilla extract and mix well until the sugar gets dissolved. Combine both the mix and add shredded carrot, oats and mix well. Cover the dough and refrigerate for 30 minutes. Pre-heat the oven to 325 degrees and line the baking tray with parchment paper. Drop the cookie dough into small portions on the parchment paper and flatten it gently using a spatula. Bake it for 15 minutes in a 325 degrees pre-heated oven. Allow to cool for 10 - 15 minutes and serve.
