Sardines and Greens Salad I've been putting in pitas this summer with greens from the garden. A nutrient packed lunch.

Sardines and Greens Salad (serves 2-3)

Ingredients:

  • 1 can sardines in olive oil
  • Juice from 1/2 of a lemon
  • 2T chopped fresh herbs such as basil, thyme, cilantro ect.
  • 2t freshly ground black pepper
  • 1-2T capers depending on your preferences
  • 1/2T grated Parmesan
  • 2 large handfuls of greens of any sort cut into bite size pieces. I've been using mesclun mix and collards.
  • 1 medium tomato with seeds removed. Medium dice
  • 1/3c chives finely sliced on a bias
  • 2-3 pita pockets

Directions:

  1. Add the sardines, and the olive oil they are in, to a large bowl and break up into small pieces with a fork.

  2. To the bowl add lemon, herbs, black pepper, capers, and parmesan. Mix.

  3. Add the greens to the dressing and mix until evenly distributed.

  4. Let chill in fridge for 30min to let the flavors intermingle.

  5. Stuff pita pockets with salad and top with tomatoes and chives.
