To clear the air first, these directions involve using a microwave. So if that puts you off, stop reading now.
I eat a lot of rice with my meals and learned a long time ago a quick method of cooking rice in the microwave. A month ago I thought I'd try to use the same method to make seasoned rice. I looked on the internet for inspiration, took notes from various recipes and settled on the below:
Ingredients:
-
1 cup of rice (I use plain white rice that I buy in bulk)
-
1/4 tsp dried thyme
-
1/4 tsp crushed red pepper
-
1 tsp garlic powder
-
1/4 tsp ground cumin
-
1/4 tsp ground cayenne pepper
-
1/4 tsp chili powder
-
1/2 tsp salt
-
2 cups of water (alternatively you can use 1 cup of water and 1 cup of chicken broth, though if you do this you may want to cut back on the salt listed above)
Cooking direction:
-
Put all of the above ingredients in a large microwave safe dish. I use a 2 quart microwave safe glass measuring dish.
-
Keep in mind the water will be boiling, so the dish needs to be tall enough so the water doesn't spill out of the dish when it gets to boiling temperatures.*
-
Place the dish in the microwave on high for 5 minutes.
-
When the microwave stops, set it to 15 minutes and change the power level to 50% and start it back up.
-
After it finishes, stir the rice to make sure the seasoning is mixed in well. At this time I also tend to add a little butter so the rice doesn't stick as much, though this is optional.
-
That is it, eat.
A few notes:
-
This method of cooking rice doesn't work well on larger portions of rice, so I wouldn't recommend attempting to double the portions. 1 cup of rice is the most you want to use, if you need more portions you'll want to use a different method.
-
I eat a lot of spicy food and I don't consider this spicy, but others may think differently. The above is how I like it, but depending on the person you may need to adjust the spices.
-
Any recommendations are welcome
