How do I cook a hamburger that doesn't taste "homemade"?

I'm having some trouble finding the secrets of making hamburgers taste like they do in restaurants specialized in hamburgers. I'm not expecting to have it easy.

What is it that I need to know about making the patty? The only thing that I understand is that it needs to be 80/20 ground beef. But what am I supposed to do with that meat? How do I treat it. How thick do I make the patties? How hot do I put the pan (or what do I use to cook it?).

I'm a fan of hamburgers so I'm very frustrated with the magic that happens in the restaurant that makes hamburgers end up like this

So, any recipe that is detailed in the step by step with how to make the patties?
