So i lived in spain for a year and the cheesecake there was SO different. In the UK and US the cheesecake seems to be more crumbly and creamy, but the Spanish cheesecake is just a completely different texture, it's more of a tart, like milky and gooey. More gelatinous. Almost like jelly.
I'm trying to find a way to create the same thing but I can't find anything.
