Light lemon broccoli pasta

This may be a common one, but this is a cheap, easy pasta recipe that always pulls me out of the fire in a pinch.

1 package fresh linguini or fettuccine 1 lemon 4 garlic cloves 2 cups full fat Greek yogurt 1 onion Broccoli 2 tbsp butter Crushed walnuts (optional) Parmesan cheese

Boil the pasta water first. While water boilers I slice the onion lengthwise, I do not cube.

Olive oil in pan and I start on the onions for 7-10 minutes. I throw in a few cloves of roughly chopped garlic cloves about 5 minutes after I start onion.

After another 4-5 minutes I throw in my chopped broccoli. The broccoli really absorbs the oil so watch the pan and add oil as needed. I cook until onions are extremely soft and broccoli is a nice bright green.

Water boiling I add in the fresh pasta, it should only take 2-3 minutes to cook. I drain water and try to save a 1/2 cup of pasta water.

I add cooked onion, garlic and broccoli in pan with cooked pasta. Add pasta water a little bit at first. I then add lemons zest, 2 cups full fat Greek yogurt, and butter. I will also add the juice of about half the lemon.

Mix it up and plate. I usually will add some finely chopped walnuts to the top and Parmesan cheese. You can add the other half of the lemon if it’s suits you.
