Ingredients needed:
- Duck breast with skin
- salt, pepper
- thyme, Oregano, Coriander, Fennel Seeds, All spice powder
- garlic
- Olive Oil
- Milk
- Honey
- Sherry wine
Instructions:
Duck Breast Portion:
- Season duck breast with salt, pepper and oregano
- Mix 1:1 ratio of honey and olive oil, massage duck breast thoroughly and leave marinating in the fridge over night
- The next day, put a pan on high heat
- after pan is warmed up, put duck breast skin side down on pan to get color
- next flip over and get color on other side, we are not trying to cook the whole breast here, just want to get color. Remove duck breast from pan and rest on another surface.
- Mix 1:1 ratio of sherry wine and honey, and brush the skin side with the mixture.
- combine coriander, fennel seed, all spice powder in a bowl and cover the duck breast skin with the combined ingredients. (like this)
- preheat oven to 400 degrees F and bake for ~15 mins
Plating:
Serve duck breast over a bed of mash potatoes and a side of greens!
