Honey Mustard Chicken With Jasmine Rice

This is a simple, easy to make recipe that produces a wonderful mixture of flavours that elevate it above the simplicity of the dish. This makes a wonderfully subtle creamy honey mustard sauce to accompany the chicken. Add some crunch with the snow peas and Jasmine Rice to soak up the beautiful sauce and you have a great meal that you will want to have again and again.

Ingredients:
• 2 tbsp Vegetable Oil
• 2 large Chicken Fillets, use breast fillets
• 1 Red Capsicum, thinly sliced
• 1 Brown Onion, diced
• 2 cloves Garlic, crushed
• 2 tbsp Honey
• 1 tbsp Wholegrain Mustard
• 300 ml Thickened Cream
• 100 g Snow Peas
• Coriander to garnish
• Jasmine Rice to serve

Instructions:
1. Heat 1 tbsp og oil in a frying pan on high heat.
2. Add chicken to pan and cook through until browned. Set aside on a plate.
3. Heat remaining oil in pan and add capsicum, onion and garlic and cooking for approx. 5 minutes until tender.
4. Add honey and mustard and stir through
5. Add cream, reduce heat to low, stir and simmer for approx 5 minutes until sauce thickens.
6. Add chicken back into pan along with snow peas and heat for approx 2-3 minutes
7. Serve on Jasmine rice and garnish with coriander
