Last sunday was AMAZING🍁🐢 I baked pumpkin pie for the picnic and chocolate cake also gluten free.
|RECIPE|
Crust Ingredients
- 1 cup quinoa flour
- 4 tbsp coconut sugar
- baking soda
- 2 eggs
- 1/2 cup butter or coconut oil.
- 2-3 tbsp water to make it smooth
|FILLING| - Pumpkin
- 1 cup cooked pumpkin puree
- 1 cup milk
- 4 tbsp corn flour
- 1/4 cup sliced apricots ( making filling sweeter, you can use sun dried apricots)
- 1 tbsp coconut oil
- 2 tsp of cinnamon
- 1 tsp nutmeg ground
|FILLING| - Purple Potato
- 1 cup cooked purple potato
- 1/3 cup coconut flakes
- 1 tbsp honey as sweetener
For crust, mix all crust dough ingredients. Then make the base and design crusts. You can use cookie cutters, fork for shaping
Water could be helpful to glue dough.
Making of pumpkin puree filling: Use a small pan. Put all ingredients but keep the pumpkin puree aside. when mixture is heated put pumpkin puree into pan. Keep mixing until it is smooth and pudding ish.
pour pumpkin filling on bases. Cover up. Put into 180 C oven. N O M
