Depression-era fudge

These is a simple recipe that I got from my great grandmother. It's not like store bought because this fudge is much drier. It's been described as milk-sugar fudge. It keeps and ships very well.

  • 6 c sugar

  • 1/2 c cocoa

  • Pinch of salt

  • 4 c milk

    Throw all this together in an oversize pot--3 times the initial volume is a good idea because this'll froth a lot. Heat to softball at 234°F stirring often.

Remove from heat, add

  • 2 tsp - 1 tbsp vanilla

  • 2-3 tbsp butter

Mix master the shit out of this in the pot until it changes. The shine will dull and the fudge will thicken. Working quickly dump the lot into a well buttered pan or it'll kick in the pot and you'll spend an hour chopping it into shards.

This is a solid 10/10 recipe. Mom made it for me because I'm going to Fort McMurray to start work for a week Dec 21. :( BUT I HAVE FUDGE.
