Ingredients: 1lb Bacon, 1 Large Pork Tenderloin, 2 large onions, Water, 1 Can Tomato Soup, Hickory BBQ sauce, Peanut Butter, Strawberry jam (optional: Scotch Bonnets or Habaneros) Sliced Bread
In a slow cooker add a large pork tenderloin cut up 2 large onions and add to pot, add 1 can of tomato soup and add water until half way up the tenderloin. (Optional: cut up 2 scotch bonnet or habanero peppers and add to pot) cook on low for 6 hours.
When the pork has been cooking about 5 hours and 45 minutes cook 1 lb of bacon, set bacon aside and add the remaining bacon grease into the pot with the pork. Continue cooking another 3 hours.
Remove Pork from Slow cooker and Remove the remaining ingredients from the pot. Pull the pork apart with 2 large forks and crumble in the bacon. Add 1/4 cup of hickory BBQ sauce 1/4 cup and 1 tbsp of Peanut Butter (smooth or Chunky) And 1/4 Cup Strawberry Jam. Mix well.
Serve on Toasted Whole wheat bread with a healthy spread of peanut on one side and jam on the other. Serves well with Sweet Potato Fries Or Yucca Fries
