Cajun Meatball Stew the Way Momma Made It

Ingredients

* Meatball mix * 2.5 to 3 pounds of ground beef * 3/4 cup of fine bread crumbs * 1 Tbsp salt * 1/2 tsp cayenne pepper * 1/2 tsp white pepper * 1/2 tsp black pepper * 1/2 tsp paprika * 1/2 tsp dried thyme * 1/2 tsp dried parsley * 1/2 tsp garlic powder * 3 eggs * 3/4 cup flour * 3/4 cup butter * 1 large onion chopped * 1 bell pepper chopped * 2 stalks of celery chopped 

Directions

1. Add butter to a cast iron skillet, add flour and stir continuously over medium heat until dark reddish brown color. Remove from heat. 2. Add 3/4 of the chopped vegetables to the roux, mix and set aside (Save the remaining vegetables until later) 3. Add 2 quarts of water to a large pot, bring to a boil. Slowly stir in the roux and vegetables. 4. Combine the ingredients for the meatballs and mix thoroughly. Make about an 1.5 inch to 2 inch meatballs and add them to the stew 5. Cover and cook about 25 minutes at a simmer 6. Add the remaining vegetables to the stew, stir and cover and cook for an additional 30 minutes at a low simmer. 7. Server over rice.
