Gruyère Cheese Popovers

Ingredients -2 cups whole milk -4 eggs -1 1/2 tsp salt -2 cups all-purpose flour -Roughly 2-3 oz. of Gruyère cheese, cubed.

Prep 1. Preheat oven to 375°, and place Popover pan on bottom rack. 2. In a medium saucepan, warm milk over medium heat until hot. (Do not let milk thicken) 3. Whisk eggs with salt; adding the hot milk slowly. 4. Slowly whisk flour into batter in 4 stages. 5. Once oven has heated, take out the popover pans (they should be hot) and lightly grease (if nonstick) or liberally grease (if not nonstick). 6. Pour batter into popover cups; fill to top. 7. Evenly distribute Gruyère cheese cubes into each popover cup. 8. Bake for 40-45 minutes (or until golden brown), but do not open oven until finished, as they may collapse while still expanding.

**note It helps to put I cookie sheet with sides under the popover pan, because it helps channel heat and catches any batter that tends to drop over the edges.
