My partner was recently diagnosed T1 diabetic, and his blood sugar is currently all over the place as he is very sensitive to even low quantities of carbs / sugar. We have been advised to eat a limited diet in this respect, until he gets his insulin levels sorted and isn't at risk of sudden highs & lows any more
Luckily this isn't too much of a change for us but it has ruled some things out, like the mix I used to use for pulled pork - one of his favourite meals. I never realised how much sugar that little packet had in it before. I've looked at a lot of recipes, but they all seem to include sugar, honey, Dr. Pepper, orange juice, bottled BBQ sauce, etc and he just can't have these at the moment. Unfortunately he doesn't like artificial sweetener (says it tastes 'chemically').
Does anyone have any advice on how to get the best tasting pulled pork without these? It doesn't necessarily have to be barbecue flavour or sweet tasting, just tasty! I'd experiment myself but don't want to risk ruining a good joint of meat if I guess wrong. Thanks guys :)
Edit to add: I normally cook this in a slow cooker but could also do it in the oven!
