Question: How can I recreate this marinated boneless leg of lamb from Costco?

This is what the marinated leg of lamb looks like

The ingredients listed are:

  • Salt
  • Sugar
  • ??Spices??
  • Dehydrated Red Bell Pepper
  • Dehydrated Garlic
  • Dehydrated Onion
  • Citric Acid

I bought a a non marinated boneless leg of lamb (5.5 lbs) from Costco yesterday. I plan to marinate the lamb then cut it into 5 pieces. Then I will sous vide the pieces for the meals. Here and here is how I have cooked the premarinated lamb in the past.

To re-create this recipe:

  1. Does anyone have any advice on how I can recreate the above lamb?
  2. What is the missing "spices"?
  3. Can I replace the dehydrated stuff in the list with non dehydrated stuff or are things like dehydrated onion just another term for onion powder?
  4. And finally, what is the amount I should use of each ingredient?

It doesn't need to match exactly what I got from Costco, but anything I can get close to it would be AMAZING. Thanks for any help!
