Rice Pudding - From Leftover Rice

Cooking time - 40 mins, Prep time - 20 mins, Serves - 6

Ingredients

2 cups - Left over cooked rice

1/4 glass - milk

1/2 glass - Condensed milk

1 full - Egg

1 - Egg yolk

2 tbsp - sugar

1/2 tbsp - Cinnamon powder

1/2 tbsp - Nutmeg powder

4 tbsp - Chopped nuts

4 tbsp - Chopped raisins

1/2 cup - Cake crumbs or Bread crumbs

a pinch - Salt

Method

  • In a blender, put rice, milk and condensed milk. Blend it to a smooth paste. Keep it aside in a bowl.

  • Whisk egg, egg yolk, sugar, cinnamon & nutmeg powder in a blender.

  • Mix both the mixture together in a bowl and add chopped nuts & raisins. On top of it add cake crumbs and salt.

  • Take a greased baking dish, spread the mixture evenly and bake it at 180'C for 30 - minutes.
