Spaghetti with tomatoes and mozzarella

A quick and tasty Italian pasta dish for a work day.

Ingredients for two male eaters:

  • 350g of spaghetti, Linguini or whatever type of long pasta you prefer
  • 4-5 tablespoons of Extra Virgine olive oil
  • 6-8 cocktail tomatoes cut in half
  • a splash of tomatoe puree especially if you don't have the most aromatic tomatoes
  • 4 cloves of garlic roughly chopped
  • 1/2 a Chili or as much as your feel comfortable with, thinly sliced
  • 150ml of white wine but the dish also works with water
  • 125g of Mozzarella cheese
  • some greens like fresh basil for the sauce but I also made it with a bit of dried oregano. Mixing a handful of rocket under the pasta before serving is tasty as well.
  • grated cheese is entirely optional because the mozzarella has you covered but it also doesn't hurt.

Bring your generously salted pasta water to a boil and add your pasta (10-12mins cooking time). At the same time have your garlic and Chili already sweating in the olive oil. After a couple of minutes, but always before your garlic and Chili may get burned, it is time to add the tomatoes, your liquid, fresh basil or oregano powder and the splash of tomatoe puree (optional if you have amazing tomatoes or used tinned ones in the first place). Let it cook on medium heat and the liquid should have almost completely evaporated by the time your pasta is slightly undercooked "al dente". Transfer your pasta directory into the pan and add a couple of tablespoons of that salted pasta water as well. Check one last time for salt but there should be enough. Tear your Mozzarella into small pieces and mix it under the pasta (also add the optional rocket here). Once the cheese begins to melt slightly, it's time to serve.

It tastes really good and is not very complicated to assemble.
