Carnitas is Oster Roaster

Hi all!

My family is hosting a taco party this weekend with about 22 adults and 11 kids! (Pray for me).

I will be borrowing a 20qt Oster Roaster from a friend in which I’ll be cooking (for the first time) carnitas. I’m hoping to get tips on how much meat to get, but also, how to cook it!

I was planning on crock potting it, until I realized my crock pot is way to small, so will be using a Roaster for the first time ever!

Important note- carnitas is not the only meat, we are also doing pollo, but will be cooking that separately. There will be lots of other side dishes as well.
